Red chillies are green before they are ripe and they are eaten in that state. This is similar to the paprika, which is botanically also a pepper, albeit a very mild one. There are now also other color varieties such as yellow, white and orange. Because green peppers have a longer shelf life, plants have been grown in which the green variety is already edible; yellow and orange varieties have been grown to have more variety.
