Cordycepes

Cordyceps is a wild mushroom that looks like carrot strings. The flavor is nutty and mild. They are rare, but some restaurants serve it with mashed potatoes or a good piece of meat or fish. Cordyceps has also been used as a key ingredient in Chinese herbal medicine for over 2,000 years.
