Ingredients:
- Choy Sam 1 stalk
- Spring onion 4 shoots
- 1 clove of garlic
- 1 lemon
- Chives
- Mini broccoli
- Vegetable stock, cube (or homemade with mushrooms and carrot, for example)
Preparation:
Cut the Choy Sam into pieces of about one centimetre.
Put a dash of oil in your soup pan. Gently fry the Choy Sam. Chop the garlic and add it. Pour in the freshly made bouillon (or 1 litre of water with a bouillon cube). Puree the mixture into a soup. Add a little lemon juice. Add the sugar snaps, cook for 10 minutes. Add the mini broccoli and spring onion in the last 5 minutes.
Vegetables for garnishing?
Then cook the vegetables in a separate pan. First cook the sugar snaps for 10 minutes. Add the mini broccoli and spring onion and cook for another 5 minutes. Drain and use the vegetables as garnish.
