Eryngii fries

Snacking has never been so responsible. Pure quilty-free pleasure with these fries of eryngii. How much fun is that? Just happy faces at the table.

SUPPLIES for 4 people:
For the fries
8 pieces eryngii (royal oyster mushroom)
flower
2 eggs
breadcrumbs
garlic powder
salt and pepper

For the mayonnaise:
100 millilitres mayonnaise
wasabi paste
100 millilitres crème fraîche

PREPARATION
Carefully cut the hats from the eryngii (you can make mini Eryngii hamburgers from this later!).
Cut the trunk into thin strips of about one centimetre.

Stir the eggs in a bowl. Season the breadcrumbs with garlic powder, salt and pepper in another bowl. Put some flour in a third bowl. Stir the thin strips of eryngii first through the flour and then through the egg. Put the fries with the egg in a colander and drain off the excess water. In the finale, pass the fries through the breadcrumbs and fry them until golden brown at 180 degrees Celsius.

Mix the mayonnaise, crème fraîche and a very small lick of wasabi paste -let's go, this is spicy stuff! - and serve with the fries.
