ERYNGII SHOARMA

VEGETARIAN ERYNGII SHAWARMA

Mushrooms lend themselves easily to being torn apart. This is how I make vegetarian mushroom shawarma. Marinated in natural hot flavorings, the taste is so pure!

Vegetarian shawarma of mushrooms for 2 persons.
SUPPLIES:
2 a 3 pieces of Eryngii (royal oyster mushroom)
4 large pita rolls
2 tomatoes
Lettuce
2 tablespoons shawarma spices
2 tablespoons sunflower oil
Herbs
Garlic sauce
Salt and pepper

PREPARATION:
1. Preheat the oven to 200°
2. Finely chop the garlic
3. Cut the Eryngii mushroom lengthwise into 1 cm slices. Tear the logs with your hands.
4. Mix the sunflower oil, shawarma spices, the finely chopped garlic with a little salt and pepper. Let this marinate for 10 minutes.

6. Cover a baking tray with baking paper and put the marinated Eryngii on it. Place the baking tray in the preheated oven. Baking time 20 minutes. Mix the mushrooms together after 10 minutes.

7. Meanwhile cut the tomato into small cubes and the lettuce into thin strips.
8. Toast the pita bread in a toaster or in the oven.
9. Take the mushroom shawarma from the oven after 20 minutes. Fry them briefly in a frying pan until they are slightly crispy. Add the spices if needed.

10. Fill the pita with garlic sauce, lettuce, tomato and the vegetarian shoarma. Enjoy!

(optional: add bean sprouts, pickles or a boiled egg)

Homemade garlic sauce

4 tablespoons of mayonnaise
2 tablespoons of Greek yogurt
1 clove of garlic
Chives / other herbs / pepper / salt

Vegan garlic sauce:
4 tablespoons of vegan mayonnaise
2 tablespoons of Soya yogurt
1 clove of garlic
Chives / other herbs / pepper / salt
