Clean the M. Shiitakes with a kitchen paper.

Remove the hard underside of the stems. Wash the pak choi.

Remove the skin from the ginger.

Cut the pak choi, shiitake and ginger into slices.

Halve the chillies lengthwise and remove the seeds.

Fry the shiitakes in oil for 2 to 3 min.

Fry the ginger and chillis for 30 seconds.

Bring the water with the bouillon tablet to the boil. Add the shiitakes, ginger and red chillies. Leave to cook for 7 min. over a medium heat.

Add the M. Enoki, pak choi and noodles in the last 3 min.

Before serving, season with soy sauce and lime and remove the ginger and red chillies.
