Noodlesoup with shiitake and mini Shanghai

M. Wild Flavors noodle soup mix approx. 300 grams:
1 Mitrofresh mini Shanghai
100 grams Mitrofresh Shiitake
100 grams Mitrofresh Enoki
2 cm fresh ginger
1 red pepper
1 lime

200 grams of noodles
1 vegetable stock cube
1 tbsp soy sauce
1 tbsp olive oil


1.Cut the shimeji loose.

2.Cut the hard pieces from the bottom of the stem of the shiitake.

3.Clean the shimeji and shiitake with a brush or a piece of kitchen paper.

4.Wash the mini Shanghai and cut it into small pieces. You can use the whole leaf.

5.Slice the red chillies lengthwise and remove the seeds. Chop the chillies into small pieces.

6.Peel and finely grate the ginger.

7.Bring a pan of water with the bouillon cube to the boil.

8.Then add the shiitake, shimeji and noodles and cook for 5 minutes. Add the mini Shanghai for the last 2 minutes. Season with the red pepper, salt and pepper, grated ginger. The juice of the lime and soy sauce.
